Classic Beef Stroganoff
Place a medium pot on high heat with 4 cups of water and a 1/4 teaspoon of salt. Once the water comes to a boil, stir in the egg noodles. Boil the noodles for 7–8 minutes, then drain into a strainer. Rinse with cold water and set aside until Step 3.
Place a large sauté pan on medium heat. Add 1–2 teaspoons of oil and preheat for 2–3 minutes. Add the cooked shaved beef and stir occasionally, heating through for 2–3 minutes. Remove the beef from the pan and set aside.
Return the sauté pan to the burner. Pour the stroganoff sauce into the pan and bring to a simmer over medium heat. Let the sauce warm for 2–3 minutes, stirring occasionally. Return the warmed beef to the pan along with the cooked noodles. Stir well to combine and coat everything in the sauce. Simmer together for 1–2 more minutes.
Taste and season with salt and pepper as needed. Divide the stroganoff between two shallow bowls or plates. Garnish with fresh parsley or a spoonful of sour cream, if desired. Na Zdorovie!
